GF Nachos


Whenever I’m planning out our meals for the week, I try to find ways in which I can repurpose them the next night into potential leftovers. Typically we will either have chicken or steak at one point during the week and I usually cook enough of either protein to make sure that we have enough for another meal. I don’t enjoy eating the same things over and over, so I like to come up with new ways to incorporate the leftovers.

This past week we made steak one night, and I decided that I would make nachos for dinner with the extra steak since it’s pretty simple and I had all the ingredients that I needed already.

Making nachos is so simple and you can use the ingredients that I did but feel free to add in what you like. I just turn on the oven to 375 degrees and then prep the ingredients that I want to incorporate. This time I used: 2 diced tomatoes, a can of drained black beans, shredded cheddar cheese, shredded mozzarella cheese, corn tortilla chips and sliced steak. I layered the bottom of a 9×13 inch pan with the tortilla chips, then added in a layer of cheese, beans, tomatoes and steak. Then I added in another layer of tortilla chips and repeated with adding the remaining ingredients on top. I finished the the nachos off with a final sprinkling of cheese and put them in the oven for about 20 minutes. Once they were cooled, I served the nachos with a side of guacamole and salsa. Enjoy!
