Gluten Free Onion Rings

Being gluten-free definitely has its advantages (no more migraines!) but it also is tough when I want to indulge in normal breaded foods. To compensate for this, I try to come up with homemade ways in which I can recreate some of my favorites.

I had an extra onion in the fridge and I had left over gluten free bread crumbs, Schar is the brand that I use and they work pretty well, so I decided to make onion rings.

To start, I heated up a large skillet on medium high heat with enough canola oil to fill the pan with about 1/2 inch deep of oil. While the oil was heating, I sliced the onion up, dipped the separate rings in an egg wash, then dipped the onions in the bread crumbs that I had added some seasoning to (Trader Joe’s 21 Seasoning Salute, Pepper, Salt and Garlic Powder).

From there I placed the onion rings into the oil. The oil should bubble up around the onion rings and start turning the bread crumb covering a darker brown color pretty quickly. After about a minute or so I used tongs to flip the onion rings. I left them to cook for a couple more minutes, it really doesn’t take long at all. Once I removed the onions from the oil, I placed them on a paper towel to help soak up some of the excess oil.

 

My husband and I ate these as an appetizer but they would be a great addition to hamburgers or fried chicken. I hope you enjoy this gluten-free treat as much as we did!
