Quick Greek Salad

My husband has some family in town this weekend and so we’re heading down South to meet up with the fam. We’re going to have a BBQ and I decided to bring a salad. Being gluten free, I prefer to bring at least one dish that I for sure know that I will be able to eat. Not that his family isn’t extremely considerate and accommodating, I just always bring something to an event so that I know I am covered.

I had some extra feta, purple onion and tomatoes lying around so I decided to make a Greek Salad. After the gym tonight, I stopped by the store and picked up some lettuce and a cucumber.

This salad was super easy to make. I diced up the purple onion, tomatoes, and cucumber. I tossed the veggies in with the lettuce and topped the salad off with lot of feta, which is of course the best part.

For the dressing, I followed this recipe. I tasted it and it’s absolutely delicious and tastes way better than store bought Greek dressing. Opa!
